The third edition
Giornata della Ristorazione 2025, promoted by FIPE – Federazione Italiana Pubblici Esercizi, is a national initiative dedicated to recounting and enhancing the deep meaning of Italian catering, understood not only as an economic activity but as a cultural, social and identity expression of the country. Through the coordinated involvement of companies, institutions and territories, the Giornata della Ristorazione is shaped as a time for reflection and sharing on the values of the Catering Charter-quality, responsibility, education, sustainability and inclusion-that guide the sector. As part of the third edition, the egg was chosen as the symbolic ingredient, an emblem of simplicity, birth and tradition, to represent the ability of Italian catering to transform essential raw materials into expressions of excellence. The initiative highlights the role of catering as a guardian of social cohesion and a tool for the development of the country system.

the dish of this year’s Giornata della Ristorazione, is by Lorenzo Leggero, of the Celestino restaurant in Piobesi Torinese. Particularly appreciated was the way Chef Lorenzo interpreted this year’s theme, the egg, arriving at a creation capable of combining technique, territory and taste.
